Production and harvest: early thinning of grapes, average production 1.5 kg per plant – Late harvest with careful selection of grapes.
Vinification: 15 days of maceration of the grapes, vinification under controlled fermentation temperature. Aged for 12 months in large barrels and 12 more in bottle.
Pairings and dishes: red meat, game and game.
Service temperature: 18°C and uncorked well in advance.
