AROMA: Powerful aroma, expressive of ripe fruit, spicy, fine cocoa, blackberry, toasted new oak, with character, complex.

TASTE: Long, fruity, tasty and concentrated, mineral, richly roasted, ripe tannins, balanced

VINIFICATIOn: Selected vintage from the property’s vineyards located at an altitude of 600 meters. Production is limited to between 1.5 and 2.0 kg per strain. Harvested by hand at its optimum time, it is transported with great care in 10/15 kg crates, on arrival at the winery it is cooled to 10º / 12ºC passing through the selection table before vinification.

Fermentation and maceration during 15/20 days, depending on the variety, in contact with the skins does not exceed 28ºC of temperature. A modern wine, rich, with a powerful structure, soft to the touch, tasty, combining concentration with the expression of the best selected fruits.

AGEING: 18 months in new barrels, French and American oak.

PAIRINGS: Red meat, big game, roasted lamb or roast lamb, rice with meat, sirloin with liver and sauce or black truffle, goose, Iberian sausages, various stews, blue cheese, dry sheep and goat cheese.
