Winemaking process
Double sorting (mechanical and manual) of the grapes, maceration for 3 days before fermentation for better colour extraction. Alcoholic fermentation in thermoregulated tanks from 6 to 10 days, followed by secondary fermentation under the “marc” (solid remains of the grapes after pressing) from 15 to 25 days.

Maturation / blending
Maturation for 16 to 17 months, followed by blending by the family and our oenologist: 40% in new French oak barrels, 50% in French oak barrels of one or two wines and 10% in cement barrels. Bottling at the Château.
