IN FINE – Moscato d’Asti DOCG
Serving Temperature: 7°C
Vinification: The grapes undergo soft pressing for over 4 hours. The obtained must is clarified via flotation, and fermentation is carried out using carefully selected yeasts, releasing the maximum amount of free terpenes responsible for the typical Muscat aromas. Fermentation takes place in an autoclave, achieving an alcohol content of 5% and a CO2 overpressure of 2 bars. Once this goal is reached, fermentation is rapidly stopped by refrigeration.
Tasting Notes: Fine bubbles carry fruity notes typical of Muscat (linalool) to the nose, creating a heady, lingering aroma that invites you to drink. The palate is dominated by sweetness, with fruity notes reappearing intensely after swallowing via retro-nasal perception.
Pairing: Sweet and fragrant, perfect for pairing with a variety of desserts. Thanks to its liveliness, it also pairs well with many cheeses.
