Monferrato Rosso “RIVAIA” DOC

Serving temperature: 18 – 20°C
Winemaking: The alcoholic fermentation starts at 30°C in the early days for optimal anthocyanin extraction, then continues at 28°C for gentle tannin extraction. Malolactic fermentation is completed before the introduction of wood. Aging lasts for about 36 months, with half in 225-litre barrels and half in 30 hl barrels, followed by 6-9 months of bottle aging.
Tasting Notes: Intense and bright ruby red color. Full-bodied, silky, balanced, and harmonious, with notes of raspberry, blackberry, and spices. The finish is lingering and ethereal.
Food Pairing: Excellent with stews, braised meats, game, truffles, and aged cheese.
Alcohol: 14.5% vol
