L’ANTAGONISTA – Monferrato Nebbiolo DOC
Serving temperature: 16-18°C
Winemaking: After destemming and crushing, a cold pre-fermentation maceration (10°C) lasts one night without pump-overs. The next day, inoculation with selected yeast strains starts the alcoholic fermentation. Pump-overs are infrequent and the maceration lasts a maximum of 5 days, at a controlled temperature of 25°C. After malolactic fermentation, the wine is aged in stainless steel for approximately 8 months.
Tasting Notes: This Nebbiolo offers a fruity nose with hints of berries and a final note of black pepper. On the palate, it is harmonious and velvety, with a long, persistent finish.
Food Pairing: Very versatile, it pairs wonderfully with pasta dishes and both red and white meats. Its freshness and delicate aromas also make it an interesting pairing for sushi.
