Winemaking: This Barbera d’Asti is crafted from a careful selection of grapes harvested from the best vineyards. The grapes are destemmed but not crushed to preserve the integrity of the berries. A cold pre-fermentation maceration is followed by alcoholic fermentation, with gentle pump-overs and occasional delestage to extract the full range of aromas. After fermentation, the wine completes its transformation without the skins, and undergoes malolactic fermentation to add smoothness and elegance. It is then aged in barriques for about a year to refine its structure.
Tasting Notes: The wine has a harmonious bouquet, with fresh red fruit aromas complemented by subtle tertiary notes from the aging process. On the palate, it is rich, velvety, and well-structured, with a perfect balance of acidity and natural fruit sweetness. It stands out for its elegance and roundness, without the typical sharpness of Barbera.
Food Pairing: This wine pairs wonderfully with red meat, poultry, and aged cheeses. Its complexity and finesse also make it an excellent match for chocolate desserts.
