Tasting Notes:
Deep purple. Intense, with fruity notes reminiscent of cherry, plum, and blackberry. Full-bodied, velvety, with balanced acidity and an enveloping aftertaste.
Gastronomy:
This wine pairs exceptionally well with venison, mature cheeses, roasts, and grilled red meats.
Vineyards:
Produced on a limestone-clay soil with sand outcrops and south-southeast exposure. Yield per hectare: 8 tonnes. Manual harvesting.
Aging Method:
Aged for 12-18 months in 225 lt barrels. After bottling, it rests for at least 6 months.
Winemaking Process:
Careful pumping and targeted delastage help give this wine elegance and balance, completed by biological stabilization due to malolactic fermentation. It is then poured into wooden barrels.
