The Cuvée Douce produced by Domaine La Borderie is a rosé champagne with notes of violets and red fruits that will be a great match for any table, whether it is with cold meats or a dessert.

This cuvée is made from pinot noir grapes from the “Douce Folie” plot located in the Merrey sur Arce area. This is a plot that Simon and Marie Normand selected for its aptitude for producing coloured wines. The vines are 50 years old and have a limited yield.

Douce Folie is a rosé de saignée, i.e. a rosé champagne obtained by maceration of the berries for about 48 hours in stainless steel tanks. Malolactic fermentation is carried out in stainless steel tanks.

The Douce Folie La Borderie has a light pink colour with copper highlights. Its bubbles are fine and lively.

The nose is fine and delicate. We discover notes of violet, raspberry, blackcurrant and morello cherry. Mineral notes are also present.

The attack on the palate is supple, with a creamy effervescence. The palate is fleshy and acidic, with a touch of vinosity and fruitiness.

The Douce Folie cuvée will go well with a Jambon iberico, Italian charcuterie or a red fruit dessert.
