The De Quoi Te Mêles-Tu? cuvée from Domaine de La Borderie is an elegant and pure Blanc de Noirs champagne with lovely fruity notes.
The plot “De Quoi Te Mêles-Tu?” is located in Neuville sur Seine, and bears this name because it is very visible from the surrounding vineyards. It is a parcel planted in 1980, facing north.
The majority of the wine is vinified in vats (88%) in order to preserve maximum purity. A small part of the wine is vinified in barrels, bringing a touch of complexity and oxidation.
Once bottled, the wines spend at least 30 months in the house cellars.
The De Quoi Te Mêles-tu? cuvée has a luminous and dense colour. Its bubbles are fine and delicate.
On the nose, it is a champagne that reveals notes of smoked limestone, fresh grapes, apple and cherry. The second nose reveals aromas of almond, liquorice, pink grapefruit, fresh blackcurrant, wild strawberry, with more heady notes of honeysuckle, pepper and sweet spices.
On the palate, the wine is fresh, with a creamy, melted bubble. The mid-palate is fruity, pulpy and crisp. The De Quoi Te Mêles-tu Cuvée displays a beautiful length on the palate, and forms a balanced́ and concentrated, crystalline whole.
It is a remarkable cuvée that can be paired with seafood, but also with a nice white meat.
