Elmsfeuer is a semi-dry sparkling wine made from rhubarb. Elmsfeuer is made from Danish rhubarb of the Elmsfeuer variety. In the Nordic climate, Elmsfeuer rhubarb enjoys optimal conditions. The temperature differences between the cool nights and the long, bright days allow the rhubarb to ripen for a long time, which develops a fantastic aroma and a unique acidity profile. The must is fermented at a low temperature on the pulp and the wine is then fermented a second time in the bottle. The wine is stored for at least 9 months before being released. Elmsfeuer is served chilled and is recommended as a different and exquisite aperitif or as a perfect accompaniment to summer salads or dishes with baby vegetables, asparagus, fjord trout, lobster, air-dried ham, tapas and goat cheese.
